Use small amounts as a binder in your gluten-free baking. Substitute Not xanthan/Not Guar in recipes calling for Xanthan or Guar Gum, This product helps to create a light and fluffy texture. Suggested use is 1 - 2 tsp per cup of gluten free flour. Suggested usage in cookies, cakes and simple muffins is 1 tsp per cup, in breads is two tsp per cup of flour. .
